Just down the road, about a mile or so, from Firestone Walker Brewery in Paso Robles, lies a few block area of light industrial buildings that house a growing number of wineries, brewers, and a young distillery called WineShine. These guys just set up shop in February and are already producing a wide range of brandies ranging from a neutral unaged brandy which shows the off the flavors of the underlying grapes, including Grenache, Syrah, and Movedre, through various herbal and fruit essences to a spicy Cinnamon Brandy.
Additionally, they have put together an oak aged Manhattan that they call “Manhattan Project”. This is made their rye, a house made Vermouth, and bitters. The rye is produced with the assistance of Barrel House Brewing from across the street, who make the mash and ferment it before bringing it in house to distill. The Manhattan has a nice subtle warmth from the rye and a wonderful smoothness from the sweet vermouth which is nicely complimented by the bitters. The blend is then aged in oak allowing all the ingredients to blend and mellow creating a very nice finish. I found the blend to be rather vermouth and bitters forward for my taste.
As to be expected from a beginning venture, they are quickly outgrowing their equipment which includes a barrel-style reflux still used currently for all of the brandy distilling and a small alembic which is reserved for processing the rye. Understandably, these restrictions are holding them back on the variety of products that they are currently able to offer. The good news is a 300-gallon pot still with column is on order and will allow for a substantially increased production and more offerings. Their plans include offering the rye and the sweet vermouth by themselves. These guys are definitely worth keeping an eye on and I look forward to keeping you updated on their progress.
